APPLE-PECAN BUCKLE
Category: Cobblers/Crumbles and Crisps
Streusel
1/4 cups pecan halves
1/2 cup each flour and packed brown sugar
1/2 stick (1/4 cup) cold butter, cut in small pieces
1/2 tsp ground cinnamon
Batter
1/2 cup butter, softened
1 cup sugar
1/2 tsp baking powder
1/4 tsp salt
1 large egg
1 Tbsp vanilla extract
1/4 cups flour
1 cup milk
1 -/2 lb Granny Smith apples (about 3 ), peeled, cored and cut in /4-in.-thick wedges (about 5 cups)
Garnish: confectioners sugar
Heat oven to 350. Have a rimmed baking sheet ready. Lightly coat a 13 x 9-in. baking dish with nonstick spray.
Streusel: Spread pecans on baking sheet. Bake, stirring once, 8 to 10 minutes until lightly toasted. When cool, chop coarsely. Mix next 4 ingredients in a medium bowl with fingers until crumbly. Stir in pecans.
Batter: Increase oven to 375. Beat first 4 ingredients in a large bowl with mixer on medium-high speed until pale and fluffy. Beat in egg and vanilla until well blended. Add flour in 3 additions, alternately with milk, beating just to blend.
Spread 2⁄3 the Batter (2 cups) in prepared pan. Sprinkle with 1⁄2 the Streusel. Top with apple wedges; dot with remaining 1 cup batter (batter will spread). Sprinkle with rest of streusel.
Bake 40 to 45 minutes or until pick inserted near center comes out clean. Remove pan to a wire rack to cool. Serve warm or at room temperature, dusted with confectioners sugar.
