CHOCOLATE ORANGE TRUFFLES

12 oz milk chocolate morsels
4 tbsp butter, at room temperature
1/2 cup fresh orange juice, strained
1 tbsp grated orange zest
1 cup walnuts or pecans, finely chopped (optional)
White chocolate wafers for coating (optional)

Melt chocolate in double boiler or microwave. Remove from heat and place in a medium bowl. Using a mixer on medium speed, beat in the butter until fluffy. Beat in the zest and orange juice. Cover and chill until firm. Using a tbsp or melon-baller, scoop up the truffle mixture and roll it into one-inch balls. Roll each truffle in the chopped nuts until well-coated. Place in freezer bag and freeze until ready to serve. (Truffles may be kept in freezer for up to one month.)

For an interesting variation, dip truffles into melted white chocolate and cool on wax paper.
