BANANA NUT BREAD WITH ORANGE GLAZE
Category: Quick Breads
3/4 cup butter, softened
1 (8 oz) pkg cream cheese, softened
2 cups sugar
2 eggs
1 1/2 cups mashed ripe bananas, about 4
1/2 tsp vanilla extract
3 cups flour
1/2 tsp baking powder, salt and baking soda
2 cups chopped pecans
Orange Glaze
1 cup confectioners sugar
3 tbsp orange juice
1 tsp grated orange peel
In a large mixing bow, cream the butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add the bananas and vanilla extract. Combine the dry ingredients and add to the cream. Fold in 1 cup pecans.
Grease 2 loaf pans and pour batter into the pans. Sprinkle with remaining pecans. Bake at 350 for 1 to 1 1/4 hours.
Glaze: In a bowl, whisk the ingredients and drizzle over loaves. Cool for 10 minutes before removing from pans to wire racks.
Transfer to a large bowl; fold in the whipped topping. Stir in 3 tbsp of pecans. Pour into crust. Sprinkle with remaining pecans. Drizzle with caramel topping. Cover and refrigerate for 2-3 hours or until set.
