SPINACH QUICHE I

Category: Quiche and Savory Tarts / Tartlettes

1 (9 inch) pastry shell, baked
1/2 cup diced cooked ham
10 oz frozen chopped spinach or 2 cups packed fresh spinach, chopped
2 tbsp chopped onion
2 tbsp butter
3 eggs
1-1/2 cups half-and-half
1/2 tsp salt, pepper and nutmeg
1/4 cup Gruyere cheese

Saute ham, spinach, and onion in 2 tbsp butter until all liquid has evaporated. In a separate bowl, beat eggs with cream and seasonings. Add to other ingredients, blend, and pour into pie shell. Bake at 375 for 40 minutes or until set. Cool and serve.
