LAYERED LEMON PIE

Category: Pies - Frozen

1 chocolate pie crust

Filling
4 tbsp butter
1/3 cup lemon juice
3/4 cup sugar
Dash salt
3 eggs, slightly beaten
1 pint vanilla ice cream

Melt butter in a saucepan and stir in next 3 ingredients. Stir over low heat until the sugar is dissolved. Pour half the hot mixture into the slightly beaten eggs. Return this mixture to the saucepan and cook over medium heat until thickened. Cool and chill.

Divide the ice cream in half. Spread half onto the crust. Spread half the filling over the ice cream and freeze. Repeat layers and freeze. Let stand 10 minutes at room temperature before serving.
