MINI-JALAPENO CORN MUFFINS

2/3 cup yellow cornmeal
1/3 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 cup minced onion
1/3 cup milk
1 egg
1 tbsp vegetable oil
1/4 cup chopped jalapeno peppers

Spray miniature muffin pan with cooking spray. Combine first 5 ingredients in a medium bowl. Make a well in center of mixture. Combine remaining ingredients and pour into well. Stir just until dry ingredients are moistened. Spoon batter into muffin pan and bake at 450 for 12-15 minutes or until lightly browned. Remove from pan immediately.
