Shelly's Recipe

*SATISFYING SPINACH CASSEROLE *

1 (10 oz) pkg frozen chopped spinach
1 tbsp minced onion
2 eggs, beaten
1 cup sour cream
1 cup grated parmesan cheese
1 tbsp flour
2 tbsp butter, melted
Salt, pepper, garlic powder, to taste
1/2 lb bacon, cooked and chopped
1 lb chopped mushrooms

Topping
Butter bread crumbs
Additional grated cheese

Heat first 2 ingredients until spinach thaws. Drain and set aside. Mix together remaining ingredients and stir in spinach mixture. Pour into a greased 1-quart baking dish. Combine topping ingredients and sprinkle over all. Bake at 350 for 25-30 minutes or until set. Do not overcook or it will separate.
