BAKED SANTA FE DIP

2 cups shredded cheddar cheese
1 cup shredded pepper jack, Monterey jack or mozzarella cheese
1/2 cup mayonnaise
1 (8 oz) can whole kernel corn, drained
1 (4 oz) can chopped green chili pepper, drained
2 tsp finely chopped canned chipotle chili peppers in adobo sauce
1/4 tsp garlic powder
1 medium tomato, seeded and chopped
1/4 cup sliced green onion
2 tbsp snipped fresh cilantro
Vegetables dippers such as sweet bell pepper
Lightly salted tortilla chips or baked tortilla wedges
Sitr together first 7 ingredients in a large mixing bowl. Spread into a 9 inch pie pan or shallow 1-quart casserole. Cover and chill up to 24 hours. Combine next 3 ingredients. Cover and chill up to 24 hours. To serve, bake cheese mixture in dish at 350 for 25 minutes or until heated through. Spoon tomato mixture in center. Serve with dippers or chips.
