PEPPERONI CHEESE PINWHEEL APPETIZERS

1/4 cup Asiago cheese, grated
1 tsp thyme, dried
1 tsp oregano, dried
1/2 tsp freshly cracked black pepper
1 sheet puff pastry, thawed
1 tbsp honey-Dijon mustard, (or make your own by mixing 1 tbsp Dijon with 1/2 tsp honey)
Turkey Pepperoni slices
1 small egg beaten
Preheat oven to 400. Mix the Asiago cheese, Thyme, Oregano and black pepper together in a small bowl, set aside.
Cut the puff pastry crosswise in half to form 2 rectangles. Spread the mustard over the puff pastry rectangles leaving a 1 inch plain border at one long edge. Place pepperoni in single layers atop the mustard. Top pepperoni with the Asiago cheese mixture. Brush both plain borders with egg.
Starting at the side opposite of the plain border, roll up the puff pastry tightly, sealing at the egg coated edge. Cover the pinwheel - pepperoni cheese pinwheel appetizer pastry rolls with plastic wrap and chill the 30 minutes or overnight.
Cut each pastry roll into approximately 30 (1/4 inch) slices. Transfer pinwheel - pepperoni cheese pinwheel appetizers, seam side down, to a lightly oil sprayed foil lined cookie sheet. Bake 400 for 12 to 14 minutes or until golden brown. Remove pinwheels from oven, transfer to a platter and serve the pinwheel - pepperoni cheese pinwheel appetizers. Makes 60 pinwheels
