PEEL AND EAT MARINATED SHRIMP

Marinade
2 quarts cider vinegar
2 cups white wine or water
1/3 cup sugar
1/4 cup salt
3 tbsp pickling spice
1 tbsp shrimp boil seasoning
Shrimp
2 quarts water
1 cup cider or white wine vinegar
1/4 cup salt
1 tbsp pickling spice
4 lb medium shrimp
2 large yellow onions, sliced
1 lemon, thinly sliced
Marinade. Combine ingredients in a saucepan and bring to a boil, stirring to dissolve the sugar and salt. Let the mixture cool completely.
Shrimp: Place first 4 ingredients in a large pot and bring to a boil. Add shrimp and cook until firm, about 1 minute. Drain in a colander and let cool completely.
In a gallon-size glass jar or crock, layer the shrimp, onion and lemon slices. Pour cooled marinade over all. Cover jar or crock and refrigerate at least 24 hour or up to 3 days.
