LEMON BUTTERCREAM FROSTING

1/2 cup unsalted butter, softened but not melted
Pinch salt
1 tsp grated lemon zest
1-2 tbsp lemon juice
4–4 1/2 cups sifted confectioners sugar
5-6 tbsp heavy cream or milk, as needed

Cream butter until soft, add next 3 ingredients. On low speed, add about 1/4 cup sugar and beat until smooth. Alternately add cream and remaining sugar, blended smooth between additions. Scrape down sides of bowl. Add more cream if too stiff. Chill icing to harden if too soft.
