CHOCOLATE WHIPPED CREAM FROSTING

3 (1 oz) squares semi-sweet chocolate
2 tbsp unsalted butter
1/3 cup heavy cream
1 1/4 cup heavy cream
2 tbsp confectioners sugar
1 tsp vanilla extract

Melt first 3 ingredients in a doubled boiler, stirring until smooth. Cool completely. Beat together next 3 ingredients until soft peaks form. Do not over beat or frosting will become grainy. Fold 1/3rd of the whipped cream into the chocolate mixture just until combined. Fold the chocolate mixture into the remaining whipped cream just until blended.
