BRIE EN CROUTE

1 (2 lb) brie round
1 puff pastry dough, thawed
1 egg
2 tbsp milk
Serve with crackers or toasted baguette slices

Completely enclose cheese in pastry. Make egg wash of egg and milk. Put brie on baking sheet with seam side of dough down. Brush with egg wash. Garnish with leaves, flowers, etc from scraps of pastry and decorate top of brie. Bake at 350 for 20-30 minutes or until golden brown.
VARIATIONS: #1- In a skillet, saute 1 tbsp unsalted butter, 1/2 cup walnuts and 1/8 tsp ground cinnamon, stirring until walnuts are coated. Place on top of cheese mixture and continue as above.

#2 – Place on top of cheese mixture 1/4 cup toasted sliced almonds and 1/4 cup chopped fresh parsley and continue as above.
