CHOCOLATE TRUFFLE SAUCE

3/4 cup whipping cream
2 tbsp unsalted butter, cut into 2 pieces
12 oz semi-sweet chocolate
1 tsp vanilla extract
In a saucepan, heat over medium heat the cream and butter until the butter melts and the cream is hot. The hot cream mixture will form tiny bubbles and measure about 175 degrees on a food thermometer. Do not let the mixture boil. Remove the pan from the heat. Add chocolate and let it melt into the mixture about 30 seconds to soften. Add vanilla and stir the sauce until smooth and all the chocolate is melted. NOTE: Can be used for hot fudge sauce, fudge filling or glaze to top a pie or cover a cake.
