BAKED CHICKEN LUCERNE

3 tbsp butter
1/4 cup flour
1 cup milk
1 chicken bouillon cube
1/2 cup boiling water
1 (8 oz) pkg. Swiss cheese, cut in strips
1/4 tsp dried tarragon
dash of cayenne
4 large chicken breasts, cooked, split
1 cup fresh bread crumbs
3 tbsp butter, melted

Heat oven to 375. Make white sauce with butter, flour, & milk. Dissolve bouillon in water; add to sauce. Add cheese & seasonings; stir until melted. Place chicken in 10x6 inch baking dish; cover with sauce. Sprinkle with crumbs tossed with butter. Bake at 375, 20-25 minutes. Serves 8
