BAKED CHICKEN AND BROCCOLI CHEESE CASSEROLE

3 whole chicken breasts, skinned and halved
11/2 lbs fresh broccoli, washed
2 tbsp butter
1/2 cup chopped onion
1 clove garlic, minced
3 tbsp flour
11/4 cups milk
2 tbsp fresh snipped parsley
1/2 tsp salt
1/2 tsp oregano
1 1/2 cups cream-style small curd Cottage Cheese
11/2 cups shredded Cheddar cheese
1/4 cup grated Romano cheese
1 jar (41/2 oz) sliced mushrooms, drained
6 oz pasta, cooked and drained

Place chicken breasts in glass baking dish. Microwave on high 7 minutes. Cool slightly and cube. Set aside.

Remove florets from broccoli and cut larger ones in half. Cut stems into 1” lengths. Place broccoli in 3 quart baking dish with 1/2 cup water. Cover and microwave on high 7 minutes, stirring once. Let stand, covered, 2 minutes. Drain well and set aside.

Place butter, onion and garlic in same baking dish. Cover and microwave on high 3 minutes. Stir in flour. Gradually add milk. Add parsley, salt and oregano. Microwave on high 1 minute. Stir well;d microwave an additional minute. Stir in cottage cheese. Microwave on high 2 minutes. Stir and microwave an additional 2 minutes. Add Cheddar and Romano cheese, stirring well. Microwave on medium-high 2 minutes. Stir in chicken pieces, broccoli, mushrooms and noodles. Cover, microwave on medium 5 minutes or until heated through. Serves 8
