BAJA CALIFORNIA CHICKEN

4 tbsp olive oil
4 tbsp tarragon vinegar
2 cloves garlic
8 chicken breasts
Seasoned salt and pepper, to taste
2/3 cup dry sherry

Preheat oven to 350. Put oil and vinegar into a skillet, and then press garlic into mixture. Sprinkle chicken with seasoned salt and pepper. Add to pan and sauté chicken until golden-brown. Remove chicken to a baking pan and cover with sherry; bake for 10 minutes. Serve immediately.
