APRICOT-BOURBON GLAZED TURKEY BREAST

4-1/2 lbs bone-in turkey breast
1/4 Cup apricot jam
2 tbsp bourbon
1 tbsp orange juice
1 Small clove garlic, minced
1/4 tsp ground ginger
1/8 tsp red pepper flakes
Preheat oven to 325. In shallow roasting pan fitted with a rack, place turkey breast on rack. Roast turkey for approximately 20 minutes per lb, or until the internal temperature as registered on a meat thermometer reaches 170F. Meanwhile, in a small bowl, combine jam, bourbon, orange juice, garlic, ginger and pepper flakes. Baste turkey with mixture 1/2 hour before turkey is done. Allow turkey to rest for 10-15 minutes before carving.
