SKILLET SPAGHETTI WITH ANDOUILLE SAUSAGE AND MUSHROOMS

1/2 cup oil
1/2 cup onion, chopped
5 cloves garlic, chopped
1 cup mushrooms, sliced
1 cup andouille sausage, sliced
1 (28 oz) can crushed tomatoes
2 cups water
1 1/2 tsp salt
2 tsp sugar
1/2 lb spaghetti noodles, broken into pieces
1/2 cup heavy cream
1/2 cup fresh basil, chopped
1 1/2 - 2 cups shredded cheese

Preheat oven to 350.

Heat oil in a large skillet over medium heat. Add onions and saute until translucent. Add garlic, saute one minute longer.

Add mushrooms and sausage and saute 2-3 minutes. Add tomatoes water salt and sugar. Stir. Add noodles, stir and bring mixture to boil.

Reduce heat and simmer mixture for 7-8 minutes. Stir in cream, and basil and cook until most of the liquid is absorbed, about 7-8 more minutes. Sprinkle with shredded cheese and place in oven just until cheese melts. Serve immediately.

Serves 4.
