CREAM SLICE

1 sheet frozen puff pastry
2 cups well chilled heavy cream
1 1/2 tbsp powdered sugar, plus 1 tsp for decorating
1 tbsp vanilla extract
6 tsp seedless raspberry jam
Beaten egg for glazing

First place your mixing bowl and beaters into the freezer to becvome very cold (this helps the cream reach perfect consistency.) Let dough slack out slightly (it is best used while still semi frozen.) Cut into 6 even rectangles.

Space 2 inches apart on a baking sheet sprayed with non stick spray. Brush tops with beated egg, bake at 400 degrees for approximately 12 minutes or until fully risen and golden. Allow to cool.

Meanwhile, whip chilled cream along with sugar and vanilla until very stiff. Split cooled pastry with help of a small sharp knife. Spread each bottom with 1 tsp of jam.

Using a pastry bag, pipe thick layer of cream atop each jam covered bottom. Top with reserved puff pastry top, dredge with remaining sugar. Serves 6
