SICILIAN CASSATA

Filling
15 oz Ricotta cheese, drained well
2/3 cup confectioners sugar (more or less if you prefer more or less sweetness)
1/4 cup heavy cream
1 oz semi-sweet mini chocolate chips or other you prefer
1 tsp vanilla extract
2 pinches of ground cinnamon

Cake
8 1/2 inch thick slices of vanilla lb cake cut into 2 1/2 x 2 1/2 squares or other shape
Amaretto liquor

Garnish
Any chocolate based sauce you may buy already made or make from scratch.

Combine all above filling ingredients in a mixing bowl and thoroughly blend until smooth. Cover bowl and refrigerate overnight. Saturate both sides of cake slices with liquor and refrigerate overnight in a covered container.

The next day, garnish a nice dish with your chocolate sauce. Place one cake slice on center of dish and apply an even amount of your ricotta mixture on top and repeat for another layer use your chocolate sauce as an additional drizzle on top or any other topping you prefer. Serves: 4
