3/4 cup milk
4 cups mini-marshmallows
3 oz bittersweet chocolate, finely chopped
3/4 cup heavy cream
1 tsp vanilla extract
In a saucepan, combine the first 3 ingredients over low heat. Stir constantly, until chocolate and marshmallows have melted. Pour into medium bowl and set bowl over larger bowl of ice water. Let stand, whisking often, until mixture is cool and thickened, 15-20 minutes.
Beat cream and vanilla in a bowl until cream just holds stiff peaks. Fold chocolate mixture into whipped cream, leaving a few streaks. Spoon into dessert cups and refrigerate for at least 6 hours or up to 2 days.
