2 tbsp butter
1 cup finely chopped onion
1/3 cup finely chopped green pepper
2 tbsp flour
1 1/2 cups tomato juice
1 cup grated American cheese
3/4 tsp Worcestershire sauce
4 drops hot red pepper sauce
3 cups cooked rice
1 lb cooked shrimp, diced

Melt butter in a skillet over medium heat. Saute vegetables until tender, about 5 minutes. Stir in flour until blended, then add tomato juice and cheese and cook until cheese is melted. Add Worcestershire sauce and hot pepper sauce. Stir in rice and shrimp. Transfer to a 2 quart baking dish. Cover and bake at 350 until heated through. Serves 4.

NOTE: This can be prepared in advance and refrigerated until ready to bake.
