HUNT COUNTRY MARINADE

Category: Sauces, Marinades, Spices, Glazes and Rubs

3/4 cup cabernet sauvignon or other dry red wine
1/4 cup balsamic vinegar
3 tbsp olive oil
2 tbsp light molasses
2 tsp dried thyme and rosemary
2 tbsp gin
3 large garlic cloves, minced
3 (2x1 inch) strips orange and lemon peel
8 whole cloves
8 whole black peppercorns
2 bay leaves, broken half
3/4 tsp salt

Up to two day before using, mix all ingredients in a bowl. Marinate poultry 2-4 hours and beef and pork 6-12 hours in refrigerator. Drain marinade in saucepan. Boil 1 minute. Pat meat dry and grill, basting occasionally with marinade.
