HONEY BOURBON FIRE MARINADE SAUCE

1 onion, chopped
4 tbsp garlic, minced
1 tbsp butter
1 cup bourbon
32 oz honey
1 (16 oz) jar picante sauce ad hot salsa
2 (6 oz) cans tomato paste
1 cup tomato-vegetable juice cocktail
2 tbsp pepper
In a large saucepan, sauté onion and garlic for 10-15 minutes or until onion is caramelized. Reduce heat to low and pour in 1/2 cup bourbon to deglaze the pan. Return saucepan to medium high heat, add remaining bourbon and bring to a slow boil for 5-10 minutes, allowing the alcohol to cook out. Add the remaining ingredients and stir well. Bring mixture to a slow, rolling boil for about 5-10 minutes. Remove from heat, cover and cool in the refrigerator.
Marinate you meat in a separate container for 3-4 hours, pouring sauce over meat. Boil remaining sauce 10 minutes and serve with the meat. Discard excess marinade. Makes 14 cups.
