TARRAGON CHICKEN

4 boneless, skinless chicken breasts
Juice of 1 lemon
2 tsp Dijon-style mustard
2 large garlic cloves, minced
2 tsp dried tarragon
Salt and pepper to taste
1 tbsp olive oil
Place chicken breasts in shallow dish. Place the remaining ingredients in a small bowl and combine well with fork or small whisk. Pour marinade over chicken, being certain to get some on both sides of breasts. Let stand for 30 minutes or refrigerate for several hours.
Meanwhile, heat grill. Grill the breasts until just cooked through, turning to brown both sides. Remove from grill and serve immediately. SERVES 4 Note: This can also be made indoors in a grill pan or under the broiler.
