GREEK STYLE PORK LOIN ROAST

Category: Pork I - Tenderloins and Roasts

1 (3 lb) boneless pork loin
1/4 cup olive oil and lemon juice
1 tsp salt, pepper and oregano
3 clove garlic, minced

Spicy yogurt sauce
1 cup plain yogurt
1/2 tsp minced garlic
1 cucumber, peeled and chopped
1/2 tsp crushed coriander seed
1/4 tsp minced red onion and crushed red pepper

Place loin in a resealabag. Combine remaining ingredients and pour over pork. Seal and refrigerate overnight. Remove pork from marinade and discard marinade. Place pork over a drip pan on grill. Grill over indirect heat in covered grill until meat thermometer read 155 degrees, about 1 – 1 1/2 hours. Cover with foil and let rest 10 minutes before slicing thin. Serve with sauce. Serves 8
