DOORSTOP PORK CHOPS

1 recipe for cornbread
4-6 double-cut pork chops
Creole seasoning, oregano, thyme, salt and pepper, to taste
2 green bell peppers, diced
1 large onion, diced
4 stalks celery, diced
1/2 lb andouille sausage, diced
6 tbsp butter or oil
Root Beer Glaze
3 cups root beer
1 few sprigs rosemary
Break up cornbread into small pieces. Combine seasonings and rub on pork chops. Grill chops and set aside. Saute diced vegetables and sausage in butter in a pan until soft. Combine mixture with cornbread pieces. Place a mound of cornbread mixture on a plate, top with grilled chop and spoon glaze over top. Serves 4-5
Glaze: Simmer ingredients in a pan and reduce until it forms a thick glaze and coats the back of a spoon.
