BRAISED BARBECUE PORK SHOULDER

Category: Pork I - Tenderloins and Roasts

4-5 lb pork shoulder
1 cup bbq sauce
2 tbsp hot sauce
water or dark beer
1 disposable aluminum pan
1 cup dry rub, recipe follows

Dry rub
Mix together:
1/2 cup sugar and brown sugar
1/4 cup seasoning salt, mild chili powder and paprika
2 tbsp black pepper, garlic, celery and onion salts
1 tbsp ground cumin
2 tsp sage
1 tsp dry mustard, ground thyme and fennel
1/2 tsp cayenne pepper

Slice pork shoulder into 4 inch thick pieces. Sprinkle with dry rub. Place in pan and add liquid to cover meat by 2/3rds. Place on grill, cover and cook approximately 4 hours or until meat is tender.
