CHOCOLATE MARSHMALLOW COOKIES

For the cookies
1 3/4 cups cake flour
1/2 tsp salt
1/2 tsp baking soda
1/2 cup cocoa
1/2 cup shortening
1 cup sugar
1 egg
1 tsp vanilla
1/4 cup milk
18 regular marshmallows cut in half
Cocoa frosting (below)
Pecan halves for garnish

Mix flour, salt, baking soda and cocoa. In a separate bowl, cream shortening and sugar. Add egg, vanilla, and milk, beating well. Add dry ingredients and mix. Drop by tspful, 2 inches apart, onto lightly greased baking sheets. Bake for 8 minutes at 350 degrees. Remove from oven and press a marshmallow half, cut side down, on top of each cookie. Bake 2 minutes longer. Remove cookies and cool on racks. Top with Cocoa Frosting, then with a pecan half if you want.

For the cocoa frosting
2 cups confectioners sugar
5 tbsp cocoa
1/8 tsp salt
3 tbsp butter, softened
5 tbsp cream or milk

Combine confectioners sugar, cocoa and salt. Add butter and cream or milk. Beat until smooth. Makes about 3 dozen cookies.

Note: We topped the cookies with a maraschino cherry and a little drizzle of melted chocolate.
