SAUSAGE IN ITALIAN BARBECUE SAUCE

3-4 lbs Italian sausage, cut into bite-size pieces
32 oz jar spaghetti sauce
Dash basil, oregano and hot pepper sauce
1/3 cup brown sugar
1/2 cup red wine

Brown sausage, in batches, in a large frying pan, cooking out as much grease as possible. Cook until completely brown and may be crusty in places. Turn cooked sausage out onto paper towels to absorb all the excess oil.

Place cooked sausage into a large Dutch oven. Add spaghetti sauce. Bring to a slow boil and add seasonings to taste. Add brown sugar and wine; stir well. Reduce heat and cover. Cook for at least 1 hour; the longer it cooks, the more the sausage absorbs the tastes of the sauce.

NOTE: If using a crock pot, transfer mixture to pat and turn to high setting.
