ITALIAN SAUSAGE CHUNKS WITH RED PEPPER AND ONIONS

1 lb Italian sausage links, sweet or hot
6 medium onions, sliced
1 large red bell pepper, sliced
5-6 plum tomatoes, large chunks
Salt and pepper, to taste
1 tsp oregano
1 tbsp parsley and olive oil

Brown sausage in a skillet until browned on all sides. Remove from pan and slice into 1/4 inch slices. Deglaze and clean pan. Add olive oil and red pepper to pan and cook until they start to soften. Add meat slices and onions and cook until onions are soft. Add tomatoes and spices and cook until tomatoes are soft but not mushy. Serves with garlic potatoes. Serves 4-6
