ITALIAN POTATO PIE

1 lb Italian sausage
3/4 cup coarsely chopped green bell pepper and onion
2 clove garlic, minced
1 tbsp olive oil
2 tomatoes, seeded and medium diced
8 mushrooms, sliced
1 (2 1/4 oz) can olives sliced, drained
1 tsp basil
1/4 tsp salt
1/8 tsp pepper
2 1/2 cups mashed potatoes
1/4 cup grated parmesan cheese
2 tbsp chopped parsley

Preheat oven to 350. Crumble sausage into a skillet. Brown and drain. Spoon meat into a shallow 1 1/2 quart baking dish; set aside.

In a skillet, saute peppers, onions and garlic in olive oil until onions are crisp tender. Stir in next 6 ingredients; remove from heat.

Meanwhile, spread mashed potatoes over meat, spreading to edges of dish and smoothing surface. Spoon sauteed vegetables over potatoes to within 1 inch of edge of dish. Sprinkle top with parmesan cheese and parsley. Bake 30-35 minutes or until very hot and top is lightly browned.
