ITALIAN EASTER PIE

2 deep dish pie crusts
1/2 lb Italian sausage
1 tbsp salad oil
3 eggs
3 cups ricotta cheese
1/4 cup parmesan cheese
1/2 lb mozzarella cheese
8 slices prosciutto ham, chopped
1/4 cup chopped parsley
1/2 tsp salt
Pepper
1 egg yolk
Preheat oven to 400. Lightly grease a 10 inch flan pan or pie plate. Slice sausage 1/4 inch thick. In hot oil in a medium skillet, saute until lightly browned on all sides. Discard fat. In a large bowl, beat eggs until well blended. Add ricotta, mozzarella and parmesan with ham, parsley and salt and pepper and sausage. Mix well.
Fit pastry in pan and pour filling into crust. Cover top with remaining pie shell. Fold edge of top crust under bottom crust; press together to seal. Crimp edges. Make vents in center. Brush with egg yolk mixed with 1 tsp water. Bake for 35-40 minutes.
