1 (16 oz) can black beans
1 (15 oz) can kidney beans
1 (15 oz) can pinto beans
2 medium tomatoes, seeded, coarsely chopped
1 cup sliced green onions with tops
1/2 cup chopped celery
1 tbsp diced pimento
6 tbsp olive oil
6 tbsp salsa
3 tbsp red wine vinegar
1/2 tsp cumin
1 cup sour cream

Drain and rinse beans twice. Combine beans, tomatoes, green onions, celery and pimento in bowl; mix gently. Pour mixture of olive oil, salsa, wine vinegar and cumin over bean mixture, stirring to coat. Chill, covered, for 8 hours or longer. Spoon onto lettuce-lined salad plates; top with sour cream. Serves 8
