GERMAN CHOCOLATE SANDWICH COOKIES

Filling (recipe follows)
1 1/2 cups sugar
3/4 cup butter, softened
1/4 cup milk
2 eggs
1 1/2 tsp vanilla
1 3/4 cup flour
3/4 cup cocoa
1 tsp baking soda
1 cup semisweet chocolate chips, melted
Prepare filling; refrigerate.
Preheat oven to 350. Combine sugar and softened butter and mix at medium speed with electric mixer until creamy. Add milk, eggs and vanilla, and beat well. Reduce speed to low and add flour, cocoa and baking soda until well mixed.
Drop dough by small cookie scoop (about 2 tsp), 2 inches apart, onto ungreased cookie sheet. Bake 9 to 11 minutes, until top of cookie springs back when touched. Cool completely.
Spread filling onto flat side of one cookie and top with flat side of another cookie. Repeat with all cookies. Place melted chocolate chips into plastic sandwich bag and cut a very small hole in one corner. Drizzle melted chocolate on top of each cookie. Makes 24 sandwiches.
Filling: In a 2-quart saucepan, combine 1/4 cup butter, 2/3 cup sugar, and 1 (5-oz) can evaporated milk. Add 1 slightly beaten egg to mixture. Cook over medium heat, stirring frequently until mixture comes to boil and thickens, 8 to 10 minutes. Remove from heat and stir in 1 1/3 cups sweetened flaked coconut and 3/4 cup chopped pecans. Let mixture cool and refrigerate for at least 1 hour.
