SPINACH SALAD WITH BERRIES AND ALMONDS

6 cups baby spinach
1/2 cup crumbled feta or goat cheese
1/3 cup sliced almonds, walnuts or pecans, or a mix
1 cup fresh raspberries or strawberries
2 tbsp raspberry vinegar
2 tbsp seedless raspberry jam
1/2 tsp Dijon mustard
1/2 tsp honey

In large bowl, combine spinach, feta or goat cheese, nuts and berries.

In small bowl, whisk together vinegar, jam, mustard and honey. Drizzle dressing over top of the salad and toss gently to coat. Serve immediately. Serves 4
