GARLIC MUSHROOMS IN SPICY CHIPOTLE SAUCE

2 tbsp olive oil1
2 oz portobello mushroom caps, thinly sliced
1 medium onion, thinly sliced
3 large cloves garlic, finely chopped
2 tbsp dry red wine or beef broth
1/2 cup vegetable broth or beef broth
1 container Knorr Chipotle Mexican Cooking Sauce
2 tbsp finely chopped fresh cilantro
In 12 inch skillet, heat Olive Oil over medium-high heat and cook mushrooms and onion, stirring occasionally, 10 minutes or until onion is softened and starts to brown. Stir in garlic and cook 30 seconds. Stir in wine and cook 30 seconds. Stir in broth and Knorr Chipotle Mexican Cooking Sauce. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 5 minutes. Stir in cilantro. Serve, if desired, with grilled steak and hot cooked mashed potatoes, rice, polenta or orzo pasta. Garnish, if desired, with sour cream. MAKES 8 side-dish or 4 main-dish servings
