PARTY EYE-OF-ROUND STEAK

1/2 cup vegetable oil
1/2 cup bourbon
1 pkg dry Italian salad dressing mix
1 (2-3 lb) eye-of-round steak
Salt and pepper, to taste

Using a shallow dish, combine first 3 ingredients. Place beef in a dish and coat with the marinade mixture. Cover and refrigerate overnight. Preheat oven to 325. Remove meat from marinade and blot it dry using a paper towel. Slat the meat and coat it heavily with pepper. Place meat in oven and roast until desired doneness. Allow to cool, slice thinly and serve.
