GOLDEN POTATO SURPRISE

4-5 medium white potatoes, peeled and diced
2 tbsp butter
2 medium red onions, chopped
2 tbsp flour
1/2 tsp thyme, salt and pepper
1 cup half-and-half
1 tsp Dijon mustard
1/2 cup mayonnaise
4 slices bacon, cooked and crumbled
Cook potatoes in boiling salted water until tender; drain and set aside. In a saucepan, melt butter. Saute onions until soft. Stir in flour and seasonings. Gradually add cream, stirring constantly until sauce thickens. Remove from heat; let cool slightly. Add mustard and mayonnaise; stir until well mixed and smooth. Place potatoes in 1 1/2 quart casserole, cover with sauce. Bake at 350 for 35-45 minutes, or until bubbly. Before serving, sprinkle with bacon.
