FRIED POTATOES PAPRIKASH

Category: Potatoes

4-5 potatoes, cut into 1/2 inch cubes, washed and pat dry
1/2 cup oil
2-3 tbsp paprika
Salt and pepper, to taste
1 large onion, coarsely chopped
1 red and green bell peppers, coarsely chopped

In a skillet over high heat, add oil and add then potatoes, stirring to coat. Lower heat to medium-high. Sprinkle with paprika Stir cubes so they are well coated with paprika. Season with salt and pepper. After 10 minutes, stir in chopped vegetables. Stir periodically until potatoes are brown and slightly crisp, about 25-30 minutes. Line serving dish with paper towels. Remove potatoes from pan with slotted spoon. Pat top with paper towels and then remove them from bottom of dish. Serve.
