BLACK MIDNIGHT CAKE

1 2/3 cups sugar
2 1/2 cup flour
3/4 cup cocoa
1 1/4 tsp baking soda
1/4 tsp baking powder and salt
1 1/4 cups water
1/4 cup shortening
2 eggs
1 tsp vanilla extract

Preheat oven to 350. Grease and flour 2 (9 inch) round bake pans or 1 (13x9 inch baking pan).

Combine ingredients in a large bowl. Beat for 3 minutes on high speed, scraping bowl occasionally. Pour batter into prepared pans. Bake for 30-35 minutes for round pans, 35-45 minutes for rectangular pan. Cool 10 minutes; remove from pans with wire racks. Cool completely. Frost as desired.
