BLACK MAGIC CAKE

2 cups sugar
1 3/4 cup flour
3/4 cup cocoa
2 tsp baking soda
1 tsp baking powder and salt
2 eggs
1 cup buttermilk or sour milk
1 cup strong black coffee or 2 tsp powdered instant coffee plus 1 cup boiling water
1/2 cup vegetable oil
1 tsp vanilla extract

Preheat oven to 350. Grease and flour 2 (9 inch) round bake pans or 1 (13x9 inch baking pan).

Combine dry ingredients in a large bowl. Add eggs and next 3 ingredients; beat on medium speed, (batter will be thin). Pour batter into prepared pans. Bake for 30-35 minutes for round pans, 35-40 minutes for rectangular pan. Cool 10 minutes; remove from pans with wire racks. Cool completely. Frost as desired.
