MANDARIN PORK AND VEGETABLES

1 lb pork, cut into strips
4 tbsp oil, divided
2 clove garlic, minced
2 cups broccoli flowerettes, cut
2 onions, cut into wedges
1 carrot, cut into julienne strips
1/2 lb bean sprouts
1/2 lb mushrooms, sliced

Mandarin Sauce
2 tbsp cornstarch
1 1/4 cups water
1/3 cup corn syrup
1/3 cup soy sauce
1/4 tsp crushed red pepper

Mix ingredients to sauce. In a large skillet, heat 2 tbsp oil over medium-high heat. Add pork and garlic. Stir-fry 5 minutes or until tender. Remove from skillet.

Heat 2 tbsp oil. Add 1st 3 vegetables and stir-fry 2 minutes. Add mushrooms and sprouts. Stir-fry 1 minute or until vegetables are tender-crisp. Return pork to skillet. Restir sauce. Mix into skillet. Stirring constantly, bring to a boil over medium heat and boil for 1 minute. Serve over cooked rice.
