PEACH PECAN TORTE

1 1/2 cups whipping cream
1 1/2 cups sugar
3 eggs
2 tsp baking powder
2 tsp vanilla
1 tsp almond flavoring
1 3/4 cup flour
3/4 cup pecan, chopped
1 can sliced peach
1 1/2 cups peach preserves
Whipped cream
Frosting
4 cups confectioners sugar
1/2 cup vegetable shortening
1 tsp vanilla
1/2 cup water
Beat the sugar, eggs and flavorings for 5 minutes. Add cream and dry ingredients alternately. Stir in nuts. Pour into 2 (9 inch) pans and bake at 350 for 35 minutes. Cool in pan for 10 minutes. Remove from pans. Split each cake layer in half horizontally with a long, serrated knife. Place one cake layer on cake plate. Place a small amount of frosting in a piping bag and make a ring around the edge on top of the cake. Spread top of one of the layers with half the peach preserves inside the frosting ring.
Frosting: Mix together the ingredients and frost the top layer of first cake with frosting, and place the bottom layer of the second cake on top. Repeat with frosting rings and preserving between each layer. Spread a thin layer on top layer and frost sides of torte with remaining frosting. Arrange drained peach slices around edges of the top cake.
