SPINACH PUFFS

1 (12 oz) pkg frozen spinach souffle, thawed
3/4 cup flour
1 tsp baking powder
1/2 salt and onion powder
1 egg, lightly beaten
3/4 cup shredded Swiss cheese
1/4 cup fine dry breadcrumbs
Vegetable oil
Grated parmesan cheese

Sift flour with baking powder and seasonings. Combine souffle and egg in a medium bowl and add flour mixture; stirring until well combined. Add cheese and breadcrumbs; stir well to combine. Chill mixture for 30 minutes.

Heat 3 inch oil in a large skillet to 350 degrees. Drop spinach mixture by rounded tbspfuls into hot oil; fry for 3 minutes or until golden brown. Drain on paper towels. Dust lightly with cheese; serve hot. Serves 6-8
