NEW ENGLAND FISH CHOWDER

6 slices bacon
1 pkg leek soup mix
2 cups water
1/4 tsp dried thyme leaves
1 medium potato, peeled and diced
1 cup frozen corn
12 oz fish fillets, cut into 2 inch cubes
1 cup half-and-half

In a 3-quart saucepan, cook bacon over medium-high heat for 3 minutes or until brown. Remove. Pour off oil, reserving 2 tbsp fat. Stirring constantly with a whisk, add soup mix, water and thyme. Add potato. Stirring frequently, bring to a boil over medium-high heat. Partially cover and simmer, stirring occasionally, 20 minutes or until potato is tender. Stir in corn and fish. Stirring reque4ntly, bring to a boil. Reduce heat and simmer 4 minutes or until fish begins to flake. Gradually stir in half-and-half; heat through. Crumble bacon and add to chowder.
