BEEF TENDERLOIN WITH GREEN PEPPERCORN-BRANDY SAUCE

4 (8 oz) beef tenderloins
Salt and pepper, to taste
2 tbsp butter
6 tbsp chopped shallots
2 tbsp green peppercorns
2 cups beef broth
2 tbsp whole grain Dijon mustard
4 tbsp heavy cream and brandy
4 tbsp chopped chives
Salt and pepper both sides of beef. Heat butter in a skillet and add beef. Cook 5 minute on each side and remove to a platter; tent with foil to keep warm.
In same skillet, add shallots and peppercorns. Cook 2 minutes or until soft. Add broth, mustard, cream and brandy. Cook 5 minutes or until reduced to half. Place beef on serving plates. Top with sauce and garnish with chives. Serves 4
