CRISPY HERB BAKED CHICKEN

2/3 cup instant mashed potato flakes
1/3 cup grated Parmesan cheese or cheddar cheese
2 tsp parsley flakes, if desired
3/4 1 tsp garlic salt
1 cut up frying chicken, skinned, or chicken breasts (number you want)
1/3 cup butter, melted
Heat oven to 375. Grease or line with foil and grease 13 x 9 pan.
Combine potato flakes, Parmesan cheese, parsley flakes, and garlic salt in medium bowl; stir until well mixed. Dip chicken pieces in margarine; roll in potato flake mixture to coat. Place in greased pan. Bake for 45 to 60 minutes or until chicken is fork tender and juices run clear. Serve with mashed potatoes.
