CHILI CON QUESO BEEF AND POTATOES

1 tsp salt and pepper, to taste
1 lb ground beef
1 (28 oz) can tomatoes, cut into small pieces
1 (4 oz) can chopped green chilies
1 lb Monterey jack or Swiss cheese, grated
Cayenne pepper, to taste
5 medium potatoes, cubed
1/4 tsp pepper
1/2 cup chopped onion

Brown beef and onion. Drain grease and set aside. Cook tomatoes, chilies, cheese, salt and pepper over low heat until cheese melts.

In a casserole, combine ground beef mixture, cheese mixture and potatoes, and bake at 375 for 1 to 1 1/2 hours. Serves 6-8
